Mediterranean cuisine is one of the most comprehensive, balanced, healthy diets that exist and it includes quality, seasonal and local produce.  

Moreover, in the Costa Blanca the first class local sea food and fish are the ingredients used in dishes such as the arroz a banda (rice cooked in fish stock) or the arroz al caldero (rice stew cooked in the traditional cooking pot).

There is also excellent salted fish and delicious dishes such as the olleta (Alicante vegetable and meat stew) in mountain areas.
